Is Brown the New Green: Brown Seaweed All the Rage!

Never thought that anything brown could be good for you? Well think again?

Researchers have recently reported that the pigment, fucoxanthin, in brown seaweed appears to stimulate a protein found in belly fat that causes fat oxidation and conversion of energy to heat. While fucoxanthin may be a mouthful to say, it could be effective in shrinking those oversized guts and may also help to reduce bad cholesterol as well, although nothing is definitive yet.

“This new trend isn't a cure-all, but it?s definitely a healthier alternative than some of the other products on the market," said Dr. Jay Kenney, Director of Nutritional Research for the Pritikin Longevity Center & Spa.

"Hopefully, in the upcoming years, more research will build on what appears to be a new potential treatment. In the meantime, until we know for sure brown seaweed, or a phytochemical found in it, has weight loss possibilities for humans, it's a good idea to stick with what research proves is most effective? namely a diet rich in fruits, veggies, whole grains and lean protein.?

Seaweed Vegetable Stew

Yield 10

Ingredients:
1 lb. Vadalia Onion Diced
1 lb. Dried Brown Seaweed
1 lb. Carrot Diced
2 lb. Idaho Potato Peeled and Diced
1 tbsp. Grated Gingerroot
1 tbsp. Chopped Garlic
2 tbsp. Apple Juice Concentrate
1 tspn. Wasabi Powder
1 stalk Lemon Grass Cleaned and Chopped
∏ Bu Chopped Cilantro or Parsley
1 Jalapeno Pepper De-seeded and Chopped
2 Red Tomato Diced
2 Yellow Tomato Diced
3 Red Pepper Diced
3 Green Pepper Diced
3 Yellow Pepper Diced

Method:
1. Soak brown seaweed in hot water for 15 minutes.

2. In a medium hot pot sauté garlic, ginger and jalapeno, add apple juice concentrate and reduce for 2 minutes.

3. Add potato, carrot and tomato and simmer over low heat until al` dente (stirring occasionally).

4. Add all other ingredients and cook until done finish off with chopped cilantro or parsley.

5. N.B grilled tofu or seiten can also be added to variety
